Being a type 3 owner the first thing I think you should check out is a Type 3 cooling setup. If you arn't familiar, the T3 setup doesnt rely on a fan belt. If the motor is turning over, then the fan is moving and drawing cool air. Even if a T3 throws a belt, we do not loose cooling, just charging.

Drawbacks: weight. The cooling shroud for a T3 is quite heavy
cooling intake. You would have to fabricate some way of getting fresh, cool air to the rear of the car where the shroud is (possibly in rear apron?) I dunno

If you were looking for a simple setup, then here it is. An electric fan would be easier (I guess) but its just a bit mnore complicated (youd need a thermostat switch, wiring, etc.)

That sounds like just what I'm looking for. How do I go about finding or installing one of these. And if its not belt driven, how does it spin?

type3 is a pancake style cooling system, the fan attaches on the end of the crank thn blows air around the sides over the cooling fins. yes it is a good cooling system, but don't think it'd work on a bug, unless you chop the snot out of the body

consider it already snot-chopped. its in a kit car. Image

i am looking more at just bolting a 600CFM electric fan to the opening, and covering up the hole where the alternator used to poke through. thoughts?

If you already have the upright housing just make a shaft replacement for your generator and run your fan that way. Or you could weld a chevy alternator to the back half of a VW generator and have the best of both worlds.

Ok-

I think I have decided how I plan to rebuild my engine. I want to go with the simplest set up possible.

This means no dual carbs (either a single 2bbl, or the custom 4play Edelbrock 4bbl conversion). This eliminates the linkage and the syncing involved.

I'm also going to eliminate my heat exachangers, and get rid of the heating system, which for a summer driver, is not a problem.

I also want to get rid of my entire charging system and replace it with a GM 130-Amp 1-wire alternator. Mounting and hooking up the alternator is taken care of. The previous owner of my car had AC installed, and the GM alternator fits nicely in the old AC location. But now, I need to remove my old gen/alt. Doing so, my fan doesn't spin. Are there electric motors to make the fan spin? Who makes them? I dont mind getting a new shroud if needed as well.
