Tuning H30/31 PICT with Wideband

I've been searching quite a bit and found many useful threads, problem I'm running into is tuning procedures being talked about with Dels or Webers, using nomenclature I'm not familiar with.

Here's where I'm at.

Ordered multiple idle/pilot jets, and main jets.
I have:
Pilots - 50, 55, 60, 65 (some multiples)
Mains - 120, 125, 130, 135

To make sure I'm understanding the terminologies correctly here are a few pictures. The one with the jets, I understand what they have labeled as "Idle pilot" is the Idle Jet, and the "Power enrichment" is the power jet.

If I had a detailed diagram of how the passage ways worked, and what each jet controlled at what stage, as well as the Air Bypass and Volume screws, I probably wouldn't need to ask as many questions.

What I need to understand is what each thing controls, at what stage, in regards to RPM and load.

With my o2 monitor, at idle I was able to achieve a steady 800rpm idle with a 13 AF. 120 Main, 65 idle jet, 50 pilot jet. Problem is my volume screw is turned all the way in. I thought I might as well come here and try to achieve a better understanding, before even bothering to take it on the road.
