Use a .60mm shim on the pinion to start.
That should get you started.
How you measure the distance between the side covers is different for SA and IRS.
I usually do it before installing the pinion and shoot for .007 preload.
IRS is easy with a dial indicator and patience.

SA is a treat without proper tools.
Originally I had a stock diff I modified to slide thru the ID of the diff brgs.
Measure with a dial indicator. Worked great.
Now I have the correct tool. Works great too.

So how are you getting the dial indicator into contact with the ring gear to measure backlash on an IRS? I am looking at the drain plug as an option but haven't gotten there yet. Is there an easier way?
