I traded a set of Corbeau suspension seats that I had for a set of Solex 40/44EIS Kadrons today. I was never gunna use the seats so it was a good trade for me.
Questions...............What to expect on a stock 1600DP? What jetting should they be?

130 main jets and G55 idles work fine on a stock 1600.
Stock venturi size is 28mm.

The air correction jets are integral with the emulsion tubes and don't ordinarily need messing with for any gasoline-fueled application where dual 1-bbls are appropriate. You can tap them to accept threaded A/C jets, but it's far more trouble than it's worth - 99% of the time the only jets that need changing are the mains.
The most common issue encountered is poor mechanical synchronization (getting both carbs to come to closed- and wide-open-throttle simultaneously). Don't be afraid to bend the throttle levers...if one carb lacks travel compared to the other, tweak its lever towards the shaft (and/or the other carb's lever away from its shaft) to change the relative leverage.
Do not be alarmed if the engine seems to idle unevenly (stronger on one cylinder on each side) - that's the nature of a 2x1-bbl setup on a boxer engine. DO be sure that the equalizer tube connecting the manifolds isn't collapsing under vacuum (soft rubber or plastic hoses are infamous for this). Use a reinforced hose, or stuff a screen-door spring up through the soft one.

Thanks guys.............Ill give the Kaddie Shack a call to get the rebuild kits and what main jets I should be running.

The Weber progressive 2-bbl is popular with the off-road crowd since it's simple and compact and relatively good at float-level control in the rough. In your part of the world it's probably warm enough most of the year that it wouldn't be too bad on the street, but it's prone to having a huge off-idle flat spot due to the large intake plenum and runners which are hard to keep heated enough to prevent fuel condensing any time the vacuum drops off at low flow velocity. There is a manifold available which is intended to surround the plenum with exhaust gas, and it helps...but it's not cheap. There're no exhaust headers available that provide anywhere near the preheat flow that a stock muffler can - they don't have any net flow and only work by convection, so unless you want to run a stock muffler with your 2-bbl carb (talk about a poor combination) you'll be forever trying to tune out a hesitation on acceleration during the cooler months. Increasing the pump shot and richening the mixture masks the problem, but fuel economy goes to hell.
