1/2-3/4 of an inch is the norm for the bottom and some people notch the top around the upper stop but i prefer to remove the upper stop and clearance the cast iron instead of weakening the plate any more than required. Making a good radius on the notches and being carefull not to heat the plate while cutting it are also important for strength.
I have not seen it done an the dual plates before but i guess it could be.
If you look back through previous disscussions there are also a couple different ideas about how to increase travel. Notch the plate vs. remove the lower stop.

Don't If they are notched you will be running the CV at more angle then it was intended. Yes there is a small safty zone built into the CV but if the wishbone is bent only a little you will have CV problems. If you want more travel go to the T2 or Porsch CV. Yes some folks get away with notching there spring plates and some get away with dating there sister-in-law, but it's still risky & not a good idea. Vic.

On Bugasaurus (also a '69) I nothched/radiused the inner plate 9/16" and was able to run T1 CVs fine. When I put the 002 in, I went to T4/181 CV joints. No problems.
