One of the reasons is incase the pedal pressure softens during bleeding, before the valve is fully closed, to insure that there is no syphoning of air back into the slave cylinder. Depending on who I was working with and how we communicated I don't remember using a hose very many times (it can be messy though).
The other reason I always use a container is I don't want brake fluid going all over the back of the drums and axles. It strips off paint. Sometimes you get a leak and can't avoid it, but if you can keep it all in a container you're better off. Brake fluid is nasty, nasty stuff.
