probably 74mm with stock rods, 76 maybe. Rimco sells 2L "super rods" with clearanced caps and Carrillo bolts, so maybe 78, but the stock rods a tad short of ideal for 78mm.
With hbeams on 2l journals Richard has posted cam/rod clearance pics at 80-82mm iirc.
"Chevy" journal isn't much bigger, but you'd best avoid 3/8" rod bolts and heavy pistons.
Cam clearance is the biggest problem due to the T4 cam lobe setup.

Addendum to Newtons first law:
zero vehicles on jackstands, square gets a fresh 090 and 1911, cabby gets a blower.
EZ3.6 Vanagon after that.(mounted, needs everything finished) then Creamsicle.

I run a 78 DPR crank with type 1 journals, H beam rods and a 1in base circle cam... No clearancing needed...
Pretty sure an 80/82 would be fine too.. at most a little bit of clearancing on the big ends to clear the cam

i'm running a 80mm crank with 2.0 journals and H-beams from EMW...running a 163/86b 1.1" reduced base circle (if i remember right) cam with no issues.
the 1.1" was for safety sake. when i did a mock up with a standard 163/86b cam, it was close...but didn't appear to need clearancing either.
you have to figure out how you'll configure your crank/rods, then select the cam you want to use...then figure out if reduced base cams will be needed and by how much...?
