Jake! Help!Mercedes oil cooler and 911 thermostat on a 1911

Jake, please tell me if I'm crazy or not. I have a 1911, using a webcam 86a cam, 30mm oil pump. Case has been drilled and tapped for plugs. Can I use the MBZ cooler (30mm id openings and measuring 12" X 9.5" X 2") and 911 factory thermostat? Is this overkill? Engine is in a 1961 VW Double-cab with type III swingaxle (no reduction boxes)
